Eric, as you know, I grew up in suburban New Jersey and in suburban New Jersey, we ate a lot of Benihana growing up and I love the Americanized version of this deeply traditional Japanese meal. On Deciens’ Lean Operation. I think that in the world of sushi, there’s a role for Jiro, Nobu, and Benihana.
